Its pretty much as before but I'll run through a brief method for you.
- 3 sachets gelatin (I use 6 as I like it extra chewy and full of protein)
1/2 cup cold water
1/2 cup organic honey or maple syrup (blackstrap molasses if your feeling brave but let me know how it goes)
1/2 tsp. of any natural extract such as vanilla, lemon or orange.
2. Heat the honey and the other ¼ cup of water and use your candy thermometer to get the mixture to 240 degrees.
4. Carefully mix in the hot syrup into the gelatin mixture for 12- 15 minutes, or until the mixture it peaks. Add the natural extract and mix for a few more minutes. Pour into the container and leave to set (I prefer to set mine in the fridge).
5. Cut into squares, and enjoy.
For an interesting twist why not coat the container and the top of the marshmallow in desiccated coconut.
