Yesterday was pancake day!! I know what your thinking, surely a health promoter such as myself wouldn't eat pancakes? In my old carbophobic day I would of scorned the idea of eating them. Nowadays its a completely different story and I now view them as a health food.

Ingredients

1 Cup of Buckwheat or Spelt Flour (or a mixture)
1 Cup of Coconut Milk or Semi Skimmed Milk (organic please)
1/2 Cup of Raw Organic Can Sugar
1 Tsp of Blackstrap Molasses
Pinch of Salt
A Splash of Distilled or Spring Water (no tap water please)
Maple Syrup
Orange or Lemon Juice
A Dash of Olive Oil

Directions
  • Mix the flour and sugar together in a mixing jug, make a well in the middle.
  • In a separate bowl mix the water, milk and blackstrap molasses (you may need to warm it to mix in the molasses)
  • Combine the two and whisk
  • Leave to sit for a few minutes while you heat a pan or griddle that has a dash of olive oil.
  • Pour in enough to thinly coat the pan (unless your going for thick american style pancakes)
  • Once its cooked on one side and is sliding in the pan get ready to earn man points by flipping it
  • Leave to brown slightly on that side before serving with your choice of maple syrup, OJ, lemon, sugar or if its lunchtime maybe a serving of vanilla Hagen Daz.

Tonight will also be pancake night as I still have 1 Cup of Coconut Milk left :-)
